Fun New Menu

I found this fun new way to plan our meals on Women Living Well. Thought it might be fun to try for a fews weeks.

Mexican Monday

Tomato-ey Tuesday

Wild-Card Wednesday

Thrifty & Thankful Thursday

Fancy Friday

Soupy Saturday

Sandwich Sunday


Mexican is anything from tacos to Mexican casserole, burrito, etc.

Tomato-ey is anything tomato based, from the obvious like pizza and spaghetti, to baked ravioli.

Wild-Card freedom day. Leftovers or another Fancy.

Thankful is something ALL my kids enjoy like hot dogs, chicken nuggets, etc.

Fancy is our night to go out or try something new.

Soup and Sandwich speak for themselves.

Menu Planning 12/5-12/11

I started Menu Planning for our family a few months ago and it has been a wonderful thing for the Knox house. Every Saturday I sit down and write out what we will be eating for the week. (Breakfast, Lunch, Dinner, and Snacks) I also write down what I need from the store off of my Menu that I just made. We are saving $100's by not going out to eat all the time and not buying things we don't need at the store.

Every week we have the same thing for Breakfast (this helps with not coming up with something new) Also, every day for snack they have 3 choices yogurt, fruit, or crackers. For lunch we eat a lot of what I made for dinner the night before. The boys LOVE the Menu because they like to know whats going on=)

Sunday-
B-Homemade Bread
L-Eat at church
D-Sandwich
S-Yogurt

Monday-
B-Oatmeal
L-Hot dogs
D-Chicken Noddle Soup
S-Fruit

Tuesday-
B-French Toast
L-Chicken Noddle Soup
D- Chicken Broccoli Casserole
S- Crackers

Wednesday-
B-Biscuits/Gravy/Eggs
L-Chicken Broccoli Casserole
D- Eat at the church
S-Yogurt

Thursday-
B-Cinnamon Rolls
L-Lunchables
D-Chicken Fettucini
S-Fruit

Friday-
B-Bacon, Egg, Cheese Sandwich or Pancakes
L-Go Out
D-Shepherds Pie
S-Crackers

Saturday-
B-Go Out
L-Shepherds Pie
D-Pizza
S-Yogurt

Cooking More

I have decided I would like to start cooking more at home. Tim and I signed up for a new menu plan called e-mealz. I went to the store tonight to get all the ingredients for the 7 new meals I am making this week. While at the store I realize I did not know what half the stuff was on the instructions. I called my sweet friend Ali and she walked me though the store (she has been doing this for years now) and I made it though the store in an hour. Tim is really looking forward to me cooking this week, so pray it all works out=)

Saturday- Someone bought our dinner tonight at Chipolte
Sunday- Chicken Fried Steak
Monday- Tilapia
Tuesday- Buffalo Wings
Wednesday- Pizza
Thursday- Chicken and Rice
Friday- McDonald's

Tim is gone Monday night for a youth retreat, I am gone Thursday and Friday for the Beyond Women's Event. Plus we all have church Wednesday night=) It will be a fun and busy week.

I know it seems like I am cooking the same thing every week, but half the time we have so much left over the next day we eat left overs. I still want to plan to cook every night=)

Knox Meals 1/24-1/30

I have been making a menu for the Knox family and I thought I might start to post it.

Saturday- Breakfast Casserole
Sunday- Chicken Cordon Bleu
Monday- Tilapia
Tuesday- Taco Soup
Wednesday- Chicken Spaghetti
Thursday- Meat Loaf and mashed potato's
Friday- Pizza

I have never made Taco Soup or Meat Loaf lets hope they are good!

Cooking for My Sweet Family

I have always said I am not a good cook so why should I even try. I decided this year I am going to be a good cook and cook for my sweet family. I am proud to say I have been cooking and baking a lot and my sweet husband LOVES IT!!! (plus we are saving so much money) My friend Ali for the past 4 years has been teaching me so much about cooking and going to the store. When I had Micah she made me Tatar Tot Casserole and my family loved it. So that is what I make for everyone that has a baby and for us at least twice a month. This is the recipe:

1 pound ground beef
2 cans or cream of mushroom
1 can evaporated milk
1 can of corn (drained)
bag of Tatar tots
shredded cheese
salt and pepper

Mix the first 4 things together in a bowl and pour it into a 13X9 pan, top it with Tatar tots, cheese, salt and pepper. Cook for 30 minutes!
