UPDATE on my health

Thank you for all of you that have been praying for my health. I am off the meds that I took for a month and feeling wonderful!!!! I have not felt this good in years. Having good health has helped with being a wife and a mommy. Thank you again for praying and asking how I am doing.

ABC Hide & Seek

Learning is so much fun when you make a game out of it. Recently, my friend, Erin, told me about a game they play. You hide letters or numbers around the house and have your kids find them and tell you what they have found. The boys want to play it all the time. They don't realize they are learning their alphabet too. This has been a great way to start educating our boys at home.































Singing to Jesus

We put the boys to bed around 8:00pm last night. At 8:30pm we could hear singing coming from both of their rooms so we decided to get off the couch and go look in their rooms. We went to Micah's room first and found him jumping up and down and singing (we have no idea what he is singing). Next is Nathan's room and we find him with his guitar singing. I ask Nathan:

Mom: What are you singing?
Nathan: I am singing to JESUS!!

Tim and I both look at each other and think how can we get mad at that=)

Knox Meals 1/24-1/30

I have been making a menu for the Knox family and I thought I might start to post it.

Saturday- Breakfast Casserole
Sunday- Chicken Cordon Bleu
Monday- Tilapia
Tuesday- Taco Soup
Wednesday- Chicken Spaghetti
Thursday- Meat Loaf and mashed potato's
Friday- Pizza

I have never made Taco Soup or Meat Loaf lets hope they are good!

Cooking for My Sweet Family

I have always said I am not a good cook so why should I even try. I decided this year I am going to be a good cook and cook for my sweet family. I am proud to say I have been cooking and baking a lot and my sweet husband LOVES IT!!! (plus we are saving so much money) My friend Ali for the past 4 years has been teaching me so much about cooking and going to the store. When I had Micah she made me Tatar Tot Casserole and my family loved it. So that is what I make for everyone that has a baby and for us at least twice a month. This is the recipe:

1 pound ground beef
2 cans or cream of mushroom
1 can evaporated milk
1 can of corn (drained)
bag of Tatar tots
shredded cheese
salt and pepper

Mix the first 4 things together in a bowl and pour it into a 13X9 pan, top it with Tatar tots, cheese, salt and pepper. Cook for 30 minutes!

Marshmallow BINGO






The boys and I have been playing marshmallow BINGO and it has been a really neat way for them to learn their ABC's. Everyday the boys ask me "what are we going to do today mom?" So I am trying to come up with ways to teach my sweet boys and for it to be fun. Tim and I are big on learning is a way of life and we want our boys to love learning.

Only God

Have you ever been apart of something that you knew was orchestrated by God? Earlier this week in my devotion time I read about Gideon (Judges 7). Gideon was in charge of an army of 32,000 men. God dwindled the thousands of men down to just 300 men. The 300 men accomplished just as much as what they thought they needed thousands to do. It was because God was involved. The question I was challenged with was "what could happen and only be explained that it was God?" I immediately made a list of 4 things that, to me, were impossible. Receiving another free car was on the list. Two days after I made the list I got a call from someone wanting to give a car away. I now have a 1999 Chevy Tahoe. In less than a week we have been apart of something that could have only been done by God. We are excited to see the 3 other "impossible" things on the list come to past. To God be the Glory.

Snowmen for Snack

Our boys love food. However, they do not like healthy food. Today we made snowmen out of fruit. They loved it and ate fruit the whole time! We also worked on there names and colors.

Our house is warming up!

This past Saturday our heater broke right before Nathans 4th birthday party. For the past few days we have been using space heaters to keep the house warm. Today one of our friends dad came and fixed our heater for FREE and put all the new parts on for FREE. Thank you Jesus for ALWAYS being our provider.

Mailbox Surprise

Most of the time it is a felony to put things besides mail in a mailbox, unless it is a blessing from God. I don't think it is a secret that we aren't wealthy financially, and so we depend on the grace of God to provide for our family. It is close to payday so we don't have much money. We have been creative with what we are going to do the next few days to save what we have, or should I say what we don't have. We were expecting a check in the mail for washing some windows this past weekend and when we went to the mailbox there was a check plus an envelope with some cash in it. Not from the same person. Nobody but God knew our need. That is how God's economy works. When you are obedient to God, He is faithful to you.

Date Night

Tomorrow my sweet husband Tim is taking me on a date. When we got married 7 years ago we said we will go on a date once a week. We might not always go to dinner and a movie every week, but we do try to spend time with each other on the couch, watch a movie at home, or play a card game. What should we do tomorrow night since we are "going out" we have 4.5 hours?

Jesus is Here

Recently our Family went to Colorado and stayed a few days in the mountains. We had a great time. Everyday we were able to play in the snow. It snowed a few hours everyday and it was beautiful. Two days before we were playing to leave we saw it was supposed to snow several feet over the next couple of days. So we wouldn't be stuck, we decided to leave early the next morning. We woke to 2 feet of snow and it was still falling. Our car was covered!!!


Being Oklahomans we don't understand "don't drive in deep snow". We loaded the car and tried to head out. We made it a few feet and couldn't move. We were stuck physically and mentally. We didn't know what to do. Here is how the conversation went in the car.

Nicole- What are we going to do now?

Tim- Um, let me get out and see what I can do.

Nathan- Mom, lets pray! Jesus please help us, Jesus please help us, Jesus please help us.

And what do you know; Jesus showed up driving a road plow.

Nathan exclaimed - Jesus is here!!!
