Knox Easter
The Knox family had a wonderful Easter. We did a lot of fun stuff.

Easter Story Cookies
Easter Story Cookies
To be made the evening before Easter, you need:
1c. whole pecans
1tsp. vinegar
3 egg whites
pinch salt
1 c. sugar
zipper baggie
wooden spoon
tape
Bible
Preheat oven to 300F.
Place pecans in zipper baggie and let children beat them with the wooden spoon to break into small pieces. Explain that after Jesus was arrested He was beaten by the Roman soldiers.
Read John 19: 1-3
Let each child smell the vinegar.
Put 1 tsp. vinegar into mixing bowl.
Explain that when Jesus was thirsty on the cross he was given vinegar to drink.
Read John 19:28-30
Add egg whites to vinegar. Eggs represent life.
Explain that Jesus gave His life to give us life>
Read John 10:10-11
Sprinkle a little salt into each child's hand. Let taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin.
Read Luke 23:27
So far the ingredients are not very appetizing.
Add 1 c. sugar
Explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to know and belong to Him.
Read Ps. 34:8 and John 3:16
Beat with a mixer on high speed for 12-15 minutes until stiff peaks are formed. Explain that the color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus.
Read Isa. 1:18 and John 3:1-3
Fold in broken nuts. Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid.
Read Matt. 27:57-60
Put the cookie sheet in the oven, close the door and turn the oven OFF. Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed.
Read Matt 27: 65-66
GO TO BED! Explain that they may feel sad to leave the cookies in the oven overnight. Jesus' follower's were in despair when the tomb was sealed.
Read John 16:20 and 22
On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow! On the first Easter Jesus' follower's were amazed to find the tomb open and empty!!

Knox Easter/Mothers Day.
Today was a WONDERFUL day. We went to Tulsa and spent the day with The Knox's. We celebrated Easter/Mothers Day. We are so blessed to have all of them in our lives. I miss them already!!!

Easter Egg Scramble
This is Tim, Nicole wanted me to blog about our family today. Today the Knox Family went on our first ever Easter Egg Hunt to Hafer Park. Nathan's 3 and he is the perfect age to hunt plastic eggs in an open field with other toddlers. We had plans to stop by Target and pick up Easter Egg Baskets, but before getting the baskets we wanted to see how many people were at the park. An hour before the hunt was supposed to start there were so many people already at the park that we decided to not to get baskets and just use the Randy' M&M in our car. We parked the car and the boys 
were so excited to hunt eggs they could barely wait. There were so many people that we just followed the crowd without knowing where we were going. We ended up standing behind an orange rope with thousands of other people waiting for the signal to start hunting eggs. I had to hold Nathan back, he was so excited to pick up the eggs. As the announcer said it "go" you would have thought there was $100 in each egg. It was a mad dash with elbows flying. The toddlers just watched as their parents ran through the grass picking up as many eggs as possible like they were in the Olympic Games. 
Nathan stood there in the middle as adults ran by him, barely missing him. I didn't realize that the sign that said "Easter Egg Hunt for Birth - 5 years" really meant "Easter Egg Hunt for the Parents of Birth - 5 years". Nathan was able to pick up a few eggs during the stampede. We left with 3 whole eggs, several halves, and an experience we won't forget. Fortunately Easter is about so much more that eggs, bunnies, and nice clothes. This was a great reminder to for us as parents to be intentional about teaching our kids the reason we celebrate Easter.
